Cooking, “food”, are the pleasures best shared, like an epicurean Ariadne’s thread between men. The latest fashionable curiosity in Toulouse? Ketogenic cooking, commonly referred to as keto. The principle can be summed up in one essential point: the drastic reduction of daily carbohydrateswhich often represents half of the composition of what we eat every day, where the ketogenic diet lowers the rate to 5 or 10%.
Draw on fat, not sugar
The objective: that the body no longer draws its energy from sugar but rather from fat. A method that has proven its worth in controlling epileptic seizures in children, a century ago.
Two childhood friends in the project
It is this tendency thatAzizformer marketing manager, and Maha, sports coach, want to develop in Toulouse but also everywhere in France. The two childhood friends, who grew up in Les Minimes and played rugby league at Olympic Toulouse a few years ago, crossed paths around keto. “I have been practicing keto for six years and I have managed to lose 15 kg without depriving myself”, testifies Maha, largely inspired by a more advanced fashion in Anglo-Saxon countries (Canada, United States, Australia, etc.) one of the promoters of the ketogenic diet, Ulrich Genisson.
Maha then “passes on” the virus to Aziz. With the same positive result on the scale!
“The first 100% keto restaurant in France”
Their questioning, accentuated during the first confinement from March 2020, translated concretely into the opening of “the first keto restaurant in France”, they explain. “That’s what came out of our market research,” say the two co-managers (there are four in all). Thursday, April 28, 2022, Keto opened its doors in the very trendy Stock Exchange districtrue Clémence Isaure (in the premises where the Avalon Pub virtual reality space was still located in early 2022).
Ketogenic cooking, instructions for use
For Aziz and Maha, ketogenic cuisine is “unfairly” associated with the concept of diet. A quick glance at the menu is enough to realize that you can indulge yourself in this new address: cheese platter, fish, chicken ballotine, piece of beef, pork tenderloin…
“Everything is keto, from appetizer to dessert. Our dishes are low in carbohydrates and enriched in fat. Meat, for example, is cooked at low temperature, often sautéed in butter, and vacuum-packed. We work the product with raw way, and everything is seasonal and local. We mainly use olive oil, oilseeds, 30% fresh cream…”.
“Copious, gourmet and good eater” dishes
Rethinking the way of cooking, unprocessed or minimally processed products… Keto exclusively offers “hearty, gourmet and good eaters” dishes, insists Maha, which bring you the feeling of satiety. “Our dishes are worked in a bistronomic way. Our desire is to produce top-of-the-range quality,” continues Aziz.
With Keto, the people of Toulouse want to “relieve the guilt and de-stress the relationship to food”.
Keto cooking, music and stand up!
The restaurant offers a hundred covers with two distinct spaces: a most classic main room, and a basement still under construction where the managers are preparing other surprises and other novelties. Because you can taste keto on the plate while enjoying a musical atmosphere or a comedy show. Artists perform live on certain evenings a week, and the entertainment will be refined from June 2022.
“From June, we will be offering concerts from Thursday to Saturday evening, and from September, from Tuesday to Thursday, we will be organizing stand-up evenings. We are going to convert the basement room to make it a stage with high tables and tapas services. The approach is the same in the kitchen and the entertainment: to relieve guilt and have fun”.
Objective: to create a market
For Aziz and Maha, this versatile and atypical place, 100% keto, must be the first step in a real boom in ketogenic cuisine in France. “Ultimately, we would like to manufacture our own keto products, with our specifications. And why not develop a keto street food brand” concludes Aziz.
