A young couple, with solid experience, has just taken charge of this emblematic establishment.
At the beginning of June 2022, Léna Bony and Mathieu Libourel took control of the Bar Restaurant Cascade in Salles-la-Source where they live with their two-month-old daughter Ana. It is with a new team that they want to give a new dynamic to this very well placed establishment next to the museum, very close to the emblematic waterfall in the heart of the village.
This young 28-year-old couple has a good education and already a lot of experience in the field: Lena fell into the gastronomic pot when she was very young since her parents run the Auberge de la Cascade in Polissal, in the town of Saint-Félix-de -Lunel, who has just celebrated her 100th birthday. Enough to awaken a passion that she developed at the high school for gastronomy and hotel trades in Saint-Chély-d’Apcher where a new passion was born there with the meeting of Mathieu, who is from the region. of Millau.

Beautiful projects followed for the young couple who first cut their teeth in renowned establishments in Geneva and then as directors at the nearby Château de Labro. “When the opportunity to settle here presented itself, we were enthusiastic about the idea, because we already had plans to have our own business. Marine Guichou, with whom worked with us as second chef at the chateau de Labro followed us and Mylène Colombier who was pastry chef at the Belvédère in Bozouls joined us. The site of Salles-la-Source, on the road to Conques is magnificent and we have total confidence in this adventure.” Lena explains with a big smile.
“We redid everything: logo, decoration, changed the furniture. We offer two types of catering: menus from €15 at noon as well as an à la carte option and more elaborate catering in the evening. We also have a more intimate room for business meals, family reunions…”, adds Matthew.
For the moment the couple employs two people and has already planned to hire another person on a permanent contract and two seasonal workers for this summer, which should arrive at the end of the month. A solid team of seven people to welcome customers every day, except Sunday evening and Monday, from 10 a.m. to 11 p.m., for service at the bar, midday and evening meals and snacking possibilities at any hour.
